Tonight for dinner we had mashed potatoes. They looked and tasted like normal mashed potatoes, however, they were actually 1/2 potatoes and 1/2 cauliflower. Steamed well, and then whipped until smooth, you can't tell that the cauliflower is even there!
I used my favorite gravy recipe found here on eatbetteramerica.com. It uses chicken broth instead of butter and it is super yummy. (Note: I add a variety of seasonings to the recipe, such as salt, pepper, garlic powder, and whatever else sounds good at the moment and I use wheat flour instead of white flour and I use less soy sauce than called for). :)
